Easy 5-Minute Romesco Sauce

Romesco sauce is a tomato-based Spanish vegetable sauce and is so easy to make! Just throw the ingredients into a mini food processor or Ninja blender and that’s it! This bold sauce reminds me of a pesto with roasted red peppers, tomatoes, garlic, almonds, and olive oil!

Spanish-inspired Romesco sauce is so easy to make and packed with bold flavors. It reminds me of pesto but with tomatoes, roasted peppers, and garlic. Your taste buds will explode when you add this condiment to sandwiches, veggies, pasta, and over chicken. Just throw the ingredients into a blender or Ninja blender and mix well.

  • Roasted red peppers
  • Diced tomatoes or 4 fresh Roma tomatoes
  • Almonds
  • Olive oil
  • Red wine or sherry vinegar
  • Garlic
  • Fresh parsley
  • Paprika
  • Sea salt 
  • Fresh lemon juice

There are so many ways to use this Romesco Sauce:

  1. Use instead of mayo or pesto on a chicken sandwich
  2. Grill zucchini, summer squash, and eggplant with Romesco sauce
  3. Saute shrimp with Romesco sauce and shaved Parmesan
  4. Drizzle sauce on chicken, shrimp, or a hearty white fish such as sea bass, halibut, or mahi mahi
  5. Toss roasted cauliflower in Romesco sauce
  6. Drizzle over eggs or a frittata
  7. Try Romesco sauce on pizza
  8. Plate fresh cooked asparagus over a scoop of Romesco

If you enjoy a smoky flavor, replace the diced tomatoes with fire-roasted tomatoes.

Swapping the paprika for smoked paprika will also amp up the smokiness.

Store the sauce in an airtight container in the fridge for 5-7 days.

Romesco sauce freezes well and will last for up to 6 months in the freezer. Just store in an airtight, freezer-safe container. Thaw in the fridge the night before using. Stir well before serving.

Ingredients
  

  • 8 ounces roasted red peppers
  • 1 14 ounce can diced tomatoes or 4 fresh roma tomatoes
  • 1/2 cup almonds
  • 1/4 cup olive oil
  • 1 tbsp red wine or sherry vinegar
  • 2 cloves garlic
  • 1/4 cup fresh parsley
  • 2 tsp paprika
  • 1 tsp sea salt or to desired taste
  • 1/2 lemon squeezed juice of lemon optional

Instructions
 

  • Combine all ingredients in a blender and mix until well combined.
  • Serve with a squeeze of fresh lemon and 1 tsp parsely for a burst of fresh flavor
